Halloween Chocolate muffins

 

Halloween Chocolate Muffins

115g sugar
75g butter or margarine
A few drops of vanilla extract
2 eggs
100g plain flour, sifted
30g cocoa powder
1 teaspoon baking powder
90ml of milk (approx) and a pinch of salt

 

 

Makes 8 Chocolate Muffins 

Preheat oven to 180C and add paper cases to a muffin tin.

Cream the butter and sugar until fluffy and light.

Beat the eggs and then add to the creamed butter and sugar, mixing thoroughly.

Carefully add all the remaining ingredients to the mix and then enough milk to achieve a soft dropping consistency. Be careful not to over mix.

Bake in the oven for 20-25 minutes check by inserting a skewer (or cocktail stick) into one of the cakes, once it comes out clean then they are done. Be careful not to overcook!

Leave to cool on a wire rack

Once cool add icing and spooky decorations, or get the kids to decorate!
